I took out the 6disk alpine deck and put in a aftermarket in it. I'm trying to get the factory 5 min play when key is remove does any knw if that's possible to do? I'm trying to find out where I can locate the tack/speed wire and also the dimmer wire? I found a wire that will dim my display but I can't dim it more if I used the rotating light switch for the dashboard.

The accessory delay logic is in the head unit itself using signals from one of the computer modules. You might be able to rig something up with a relay but you'd have to test all of the wires to see how it's wired and used.

No - you'd need a special adapter to get the steering wheel buttons to work with the aftermarket stereo. Just google it and you should find some.
