05 impala overheating

My car has 85000 miles. The high collant temp light came on and the temp gauge went to 260 RED zone. Shut car off immediately. on star said nothing was wrong with the car. The radiator resevior was empty. I added 1/2 gal of dex cool. Now it run only slightly hot. Also it will drop RPM when it is cool outside. (50 degrees) The car will stall which can be dangerous if moving out onto road. I have been to dealer. They say they can't replicate the problem. So they can't fix problem.
