Isuzu Rodeo checking oil level by hansey25

So my mother gave me her 2000 Isuzu Rodeo a few months ago. I had never checked the oil when she had it, but when I finally did check it I couldn’t get an accurate reading. The dipstick has oil at least 2 inches over the max level. I had the oil changed at a local place and the tech at the garage couldn’t get an accurate reading either.
 
About 400 miles later I was driving 3 hours home to my parents so I added a quart of oil. My step father checked the oil for me and said I had way to much oil, but that’s the same reading I’ve always had. Now 800 miles after the oil change I hear a knocking noise until the car is warm.
 
I’ve heard stories of blowing your engine from too much oil…..but the shop put in 5 quarts and the one I added makes 6…..would that be too much oil and hurt the engine? And what would be causing the inaccurate oil level on the dipstick?

What do you mean by inaccurate? Is oil visible on the dipstick at all or does it fluctuate?
