I'm looking into buying a new or recent pickup truck. I realize these aren't minivans, but I would like to stick one or two car seats in it.
Are the back seats in extended cab vehicles safe for installing car seats?

That depends fully on the type of "extended cab" pickup you are considering. Chevy/GMC 1500+ are fine, as are, I imagine, other full-size pickups, but older compact p/u's are probably not. I have ridden in Nissan, Dodge, and Toyota (all late 80s / early 90s models) extended cabs that were barely suitable for a person, let alone a car seat.
Also, the extended cab pickups built since the introduction of the "3rd door" are certainly better as far as ease of installation/removal for car seats.

On some trucks the extended cab back seat is only good for kids and midgets. Also if the truck has a bench front seat, then accessibilty to the back can be tricky sometimes. Bucket front seats makes life with car seats in the back much better.
I have a Crew Cab, F350 - so back seat is huge. Two car seats or boosters wasn't an issue. If kids got fussy on long trip, Mom could ride comfortably back there right next to them..... Still had to be careful taking babies out of truck - 4x4 had long first step to the ground..
Are you gonna be the primary driver of the truck, and the having the whole family along just as an occaisonal occurence? Or are you going to have the little critters with you everyday to drop them off to day care or something? IF it's just once in a while, you probably won't mind it. If it's everyday it could be a different story, you may find it very inconvenient in comparison to a Minivan.
Before you buy any truck, bring the car seats and the kids along to try it out. Don't forget the wife too! You yourself may be able to handle getting the kids in and out fine. Your wife may be a very different story, especially if you buy a tall 4x4 truck, and she's 4'11' and 98 lbs.
