Have decided to look at hyper milers to use for the daily commute. Considering a Toyota Prius 3 or a Jetta/Golf TDI. The Prius would be cheaper, just not sure if it would be entertaining enough to keep us occupied once the novelty of 50 MPG wears off.

The novelty of 55 mpg and nothing but $55 oil changes every 10k miles never gets old. [the first 2 are included at no charge] The prius drives fine -- like an average car with zero issues.

Given your desire to have something a bit fun to drive, I'd think the Golf/Jetta would be better suited to you. You have a Tiguan, so you're already familiar with the VW driving dynamics.
 
The Prius would be an appliance and I think you'd become bored with it fairly quickly.

the tdi with a stick could amuse you for a while. Based on your history, i really can't see the Prius being a keeper.
 
how long is the commute anyway? And is it all city traffic or open road?

The Prius C is supposedly a bit more fun than a Prius, though I haven't sampled them. What bugs me is the tiny gas tank (just 9.5 gallons).
 
I have a 3rd option for you - Mazda3 Skyactiv. Check fueleconomy.gov, the automatics are actually getting better mileage than the TDI DSGs (35.2mpg vs 34.0mpg), and remember diesel costs more than gasoline. For manuals the TDI is ahead 37.9mpg TDI, 35.8mpg SkyActiv. Even then, diesel prices around me mean the SkyActiv would cost less in fuel, which is surprising.
 
These are all stellar numbers, though, and the Mazda3 costs a bunch less than a Prius or a TDI.
 
I priced one out at under $19k with alloys, cruise, keyless. Pretty basic but not stripped by a long shot. The Golf TDI and Prius were more like mid twenties.
 
Soon we should see a Cruze diesel (hatch is Europe only though) and a SkyActiv diesel, too. Don't overlook the Focus 5 door SFE, either.
 
I'm only looking casually, but I'm considering the same type of car - a city car/fuel sipper.
