first time I went to the local BMW dealer (many years ago) to look at a 318ti, I noticed they had a lot of z3s stashed there (this was early winter IIRC). Mentioned it to the salesguy, and he told me they buy up a bunch in December (in the NE, not convertible season!) and basically sit on them a few months, and sell for a big profit when spring hits.

actually, I don't even look by VIN. With so few going through, another white one in in the area with those exact miles is about a bajillion to one shot, so it HAS to be the right one.

OK, cool. So can you look up these 3 for me:
2012 GT 500, Grabber Blue, 5,020 miles for sale in Columbus, OH.
2012 GT 500, Kona Blue, 3,376 miles for sale in Littleton, CO
2012 GT 500, Black, 1,270 miles for sale in Sioux City, IA
Now I know what you are thinking. "NYC, you've got a mortgage, a wife, 3 kids, & 3 cars. Your Prelude isn't going anywhere, you are planning on keeping your Pilot until the wheels fall off, & your BMW lease isn't up for another 20 months. What on god's green earth are you bugging me about prices of used 2012 Shelby GT 500s?"
I have a friend in Australia looking to buy one. There is a company over there that covers shipping from CA, RHD conversion, & customs. So I'm trying to help find him the right car
the right price.

I don't see any of these... I don't think ... so they must not have gone through Manheim.
However, I'm a bit suspicious of the 3376 mile one. There was one reported to have 3375 that went through Dallas last month. It is listed as "HP-White" though. I'm not sure what the HP means. Anyway, that one was supposedly in below average condition, so it only hit $36,600.

The question in my mind is why do people buy these cars and then sell them with so few miles? Do they think they're a appreciating asset?

while waiting in a jaguar dealership one day, I witnessed a conversation between an owner of a new mustang and a salesperson. This owner had sunk somewhere in the neighborhood of $25k into the car already to make it a shelby clone. He now wanted to trade it on an XK because the mustang was too loud, too harsh, etc.
Too many people have more money than brains. That's the answer to your question.

I think that's High Performance White, not normal Oxford or Wimbledon White.

Yeah, I don't know. I think a few of these GT500s with literally less than 1000 or so miles were cars that maybe just sat for too long and got driven by sales managers, maybe the owner took it for a spin... The dealer just sold it to another dealer. Who knows?

I'm sure that's true in some cases. OTOH, when we were looking at the Mini Countryman we found more than a few cars nearby that were less than one year old and with less than 5000 miles. We began to wonder what was wrong with that model as they appeared to be over-represented in the used car market...
